INSTRUCTIONS:
- Mix veggies in a bowl with 2 Tbsp. Worcestershire sauce
- Brush tenderloin with Worcestershire sauce
- Rub pork with seasoning (as much as you want)
- Separate the two pieces of tenderloin and cut down the middle (not all the way through)
- Spread the two halves of tenderloin and fill with veggie mix
- Grate cheese and spread over veggie filling generously
- Pack the filling and put the two tenderloin halves together with the filling sides matching
- Place twine and strips of bacon out on parchment, parallel and enough so they match the entire length of the tenderloin (see illustration).
- Wrap each bacon strip around the tenderloin, then tie the bacon with the twine semi-tight.
- Sprinkle more seasoning on top of the bacon-wrapped tenderloin.
SMOKING/COOKING:
- SMOKING: If you're smoking the tenderloin, place it on the smoker at 230℉ for one hour (undisturbed). Check internal temperature so it reaches at least 145°F. After removing it from the smoker, let it rest for 5 minutes.
- COOKING: If you choose to cook the tenderloin, place it in the oven at 375℉ for 40 minutes to an hour, or until the internal temperature reaches 145°F. After removing it from the oven, let it rest for 5-10 minutes.
- OPTIONAL: After smoking/cooking time is up, spread your choice of BBQ sauce over the top of the pork and keep it in the smoker or oven for 10 more minutes.
Notes
Chickpeas instead of Onions
You can certainly use both onions and chickpeas, but if you wanted to use chickpeas as a replacement for onions, one thing I like to do is roast the chickpeas first.Roasting Chickpeas
Roasting chickpeas is super easy.
- Preheat your oven to 400℉.
- Put one can of chickpeas in a mixing bowl
- Add 2 Tbsp. of olive oil to the bowl.
- If you want a little sweet glaze, add a Tbsp. of maple syrup
- Add a tsp. of salt (or to your tastes)
- Mix the contents together with a spoon
- Place parchment down on a cookie sheet
- Spread the chickpeas over the parchment evenly
- Place in the preheated oven for 10-15 minutes
- Take out of oven and let them cool for 10 minutes
