Method
Prepare the Chicken
- Cut each chicken breast in half.
- In a small bowl, mix together the spices: salt, garlic power, and lemon pepper. Pat onto both sides of dhicken breasts.
Brown the Chicken
- In a large skillet, over medium-high heat, add olive oil and butter. Melt the butter in the pan.
- Sear the chicken breasts until golden brown on both sides. You are not cooking the chicken all the way through - just browning the outside.
- Turn off the heat and set the pan aside. You will add the chicken and the pan drippings to the crockpot later.
Prepare the Sauce
- Whisk together the chicken broth and corn starch - until there are no lumps.
- Spray your crockpot with Pam oil spray.
- Pour the chicken broth/cornstarch mixture into the crockpot.
- Whisk together heavy cream, garlic, basil, salt, lemon pepper, red pepper flakes, dried celery, and paprika.
- Pour the heavy cream mixture into the crockpot with the chicken broth.
Assemble the Chicken in the Crockpot
- Place the seared chicken breast in the crockpot on top of the chicken broth and heavy cream.
- Pour the pan drippings from the skillet over the chicken breasts in the crockpot.
- Place the tomatoes in the crockpot around the chicken breasts.
Cook the Chicken
- Cover and cook the chicken on Low for 6 hours. Do not repeatedly open the lid as doing so will increase your cooking time.
- Optional: For a tangy-er sauce, in the last 1-2 hours of cooking, slice a fresh lemon and lay the slices on top of the chicken. Let it continue cooking.
Final Prep for Serving
- While the chicken is cooking, you may want to prepare egg noodles, mashed potatoes, or rice. All of these are great ways to savor the sauce!
- On a large plate, place your noodles, potatoes, or rice. Arrange the chicken breasts on top.
- While the sauce is still in the crockpot, add the parmesan cheese and stir until it melts.
- Pour the sauce with the melted cheese over the top of the chicken. Serve while hot. Garnish with fresh basil, if desired.
