Equipment
1 Dutch oven or any large stew pot
1 Blender if you want to puree the soup
Method
In a large Dutch oven, heat butter on medium heat to melting.
Add carrots and stir.
Add 1 tbsp sugar, stir, and cook carrots over medium heat for 10 minutes.
Add the Fresh Grape Tomatoes to the Carrots. Continue cooking for another 10 minutes. The tomatoes will start to loosen their peels.
Stir in the Zucchini and Squash.
Stir in the Canned Tomatoes with their juice, the Stock, and the V8.
Stir in the Cabbage.
Season with the Lemon Pepper and the Dried Celery.
Bring to a boil and simmer on medium-low for 45 minutes to 1 hour - until the carrots and squash are tender.
When vegetables are tender, you may eat the soup. I prefer to ladle the soup into a blender, add .5 cup of heavy cream and puree it. Top it will a sprinkle of your favorite cheese or dash it with fresh lime juice!Pair it with sour dough toast for a real treat!

Add-ins or Substitutions: You may add onions at the beginning when you are sautéing the carrots and tomatoes.You may substitute a small package of fresh spinach for the fresh cabbage.Creamy version The creamy version is 245 calories per 1 cup serving. Light version The 80 calories per 1 cup serving is the version without the heavy cream. If you want to eat this soup as a "diet" soup, don't add the heavy cream at the end and don't pair it with the sour dough bread. You can still puree it.
