Dave's Crock Pot Slow-Cook Black Beans

Ingredients
  

  • 2 cups Dried black beans Rinsed and picked over
  • 6-8 cups Water or vegetable/chicken broth
  • 1 med Onion Chopped or halved
  • 4-6 cloves Garlic Minced or smashed
  • 2 Bay leaves
  • 1-2 tsps Ground cumin
  • 1-2 tsps Dried oregano
  • Salt and pepper to taste
  • ΒΌ cup Olive oil (optional)
  • 1 Bell pepper (chopped) (optional)
  • 1 pinch Red pepper flakes (optional)

Equipment

  • 1 Crock Pot Cook on LOW setting.

Method
 

  1. Prepare the beans: Rinse the dried black beans in a colander and pick through them to remove any debris or small stones.
  2. Combine ingredients: Place the rinsed beans, onion, garlic, bay leaves, cumin, and oregano in the slow cooker.
  3. Add liquid: Pour in enough water or broth to cover the beans by at least 2 inches (about 6 to 8 cups).
  4. Cook: Cover the pot with the lid.
Kneading Adventure:
  1. Season: Once the beans are tender, remove and discard the bay leaves. Stir in the salt, pepper, and any optional lime juice to taste. Adding salt at the end ensures the beans cook properly.

Notes

Serve or store: The beans are ready to eat immediately. They can be stored in their cooking liquid in an airtight container in the refrigerator for up to a week, or frozen for up to 3 months.
